It's school holidays now so that means that my boys are in the kitchen. I love their interest in food and cooking and it's certainly something that I've tried to foster from a young age. So the enthusiasm is there, but we're still working on their cleaning up skills!!
Anyway I have my son's permission to share his guacamole recipe which is easy and DELICIOUS. It is quick to make, full of real food goodness, doesn't need any special equipment, and is the perfect accompaniment to a warm afternoon.
Ryan's "Gwacca" Recipe
1/4 of a red onion
2 cherry tomatoes
1 1/2 tbsp salsa
Juice of a whole lime
(*Handful of fresh coriander, finely chopped - optional)
Peel the avocados and discard the stones. Mash the avocado flesh in a mixing bowl.
Finely chop the red onion and tomatoes, then add to the mashed avocado.
Add in the remaining ingredients and mix to combine.
* Ryan doesn't include the coriander as I'm told that the little bits stick to the roof of his mouth, but if you're like me and enjoy the flavour then add some in. ; )
